Delicata Squash and Apples-A Recipe

It is often a challenge to find a unique recipe using winter vegetables. By this time of the year, I am longing for cucumbers and lettuce and all those fresh summer berries. I found this recipe and I would like to share it with you. It is an easy side dish which works well with poultry or a nice pork tenderloin. Double the recipe and it is wonderful as a leftover for  lunch. The recipe calls for bacon but  it can be left out. Bacon adds a salty flavor which compliments the sweetness of the roasted apples.

Delicata Squash and Apples-A Recipe

Ingredients

  • 2 delicata squashes cut crosswise into rings seeds removed the cut into halves
  • 8 Pink Lady or Gala apples cut into quarters and seeds removed
  • 4 tablespoons olive oil
  • 8 pieces of bacon cut into inch pieces
  • 1/4 teaspoon salt

Instructions

  1. Preheat oven to 400 degrees .Place the apple quarters and the Delicata squash and bacon in a bowl, toss with olive oil and season with salt. Lay the squash , apples and bacon in a rimmed baking dish and roast for about 45 min. Turn with a spatula after about 35 minutes. Depending on your oven you may need to roast this dish a little longer until squash is soft. Serve warm.
