Recipe of The Week! Zucchini Ribbons with Farro and Goat Cheese

Zucchini Ribbons with Farro and Feta

Ingredients

  • 1 zucchini, peel 20 ribbons using vegetable peeler.
  • 1 cup farro.
  • 6 tablespoons crumbled goat cheese
  • salt and pepper to taste

Instructions

  1. Boil the farro in medium saucepan until tender.
  2. Strain liquid and set aside.
  3. Put zucchini ribbons in metal strainer and set in a bowl.
  4. Pour the hot water onto the zucchini and let sit for two minutes.
  5. Strain zucchini.
  6. Crumble goat cheese.
  7. Divide zucchini into two servings.
  8. Place farro on a plate and top with zucchini ribbons and crumbled goat cheese.
  9. Season to taste.
