Recipe of The Week! Zucchini Ribbons with Farro and Goat Cheese

Zucchini Ribbons with Farro and Feta
Ingredients
- 1 zucchini, peel 20 ribbons using vegetable peeler.
- 1 cup farro.
- 6 tablespoons crumbled goat cheese
- salt and pepper to taste
Instructions
- Boil the farro in medium saucepan until tender.
- Strain liquid and set aside.
- Put zucchini ribbons in metal strainer and set in a bowl.
- Pour the hot water onto the zucchini and let sit for two minutes.
- Strain zucchini.
- Crumble goat cheese.
- Divide zucchini into two servings.
- Place farro on a plate and top with zucchini ribbons and crumbled goat cheese.
- Season to taste.
