Recipe Of The Week! Tomato and Green Bean Side Dish

Ingredients

  • 1/2 pound green beans
  • 2 cans diced tomatoes
  • 2 large shallots, thinly sliced into rings
  • 1 small jar 6.7 ounce jar pickled ginger ( We used Ginger People pickled ginger)
  • 3 tablespoons extra virgin olive oil
  • 2 cups pre-cooked brown rice

Instructions

  1. Saute sliced shallots in olive oil until soft.
  2. Steam green beans until bright green, but still crunchy, about 7 minutes.
  3. Add beans to shallots.
  4. Add 2 cans diced tomatoes.
  5. Add 1/2 to 1 jar pickled ginger.
  6. Simmer an additional 8 minutes.
  7. Serve over brown rice.
