Recipe of the Week-Curried Vegetables


  • 1-2 tablespoons olive oil
  • 1/2 cup water
  • 1 head cauliflower cut into small florets
  • 1 large yellow onion cut into 1/4 inch pieces
  • 1 large sweet potato, peeled and cut into 1/4 inch cubes
  • 2/3 cup lite coconut milk
  • 2 cups frozen peas
  • 2 rounded tablespoons sweet curry


  1. Saute in olive oil, cook until softened, onions.
  2. Add sweet potato, broccoli and water.
  3. Cook until vegetables are soft.
  4. Add frozen peas.
  5. Add curry and salt to taste.


If you want to cut the calories, decrease the amount of coconut milk and/or use an olive oil spray.
This dish takes only minutes to prepare and allows experimentation with different kinds of curry. We used sweet curry for this recipe. Not all curries are spicy, so don’t let fear of spice stand in the way of enjoying curry! If you like a little spice, try a little medium or spicy curry, but always remember to add it in slowly and taste before adding more!
