Vegetable Chips

Many vegetables can be made into chips using a little olive oil spray, sea salt and spices of your choice. We have tried brussel sprout leaves, both golden and red beets, kale, carrots and potatoes (both sweet and white).

You will need a cookie sheet, parchment paper, a sharp knife or mandoline.

Cut your vegetables as thin as possible. For kale, break off bite sized pieces of the leaves. Lightly spray the vegetable with olive oil spray. Sprinkle with sea salt and your choice of spices such as cumin, cayenne, pepper, oregano etc.

Place the vegetables on a piece of parchment paper and lay on the cookie sheet. Bake the chips at 325 f for between 18-25 minutes, checking frequently to avoid burning.

Eat them! We have yet to meet a teenager who can eat just one!
