Joseeā€™s Sweet Potato and Green Apple Soup

This soup freezes well, so you can double the batch and freeze half. Contains beta carotene and curcumin.


  • Three shallots finely chopped
  • Two tablespoons olive oil
  • 1 large garlic clove, minced
  • 2 teaspoons curry powder
  • 1.5 pounds sweet potato, peeled and cubed
  • 4 cups water
  • 4 teaspoons Better Than Bouillon- chicken
  • 2 green apples, peeled,cored and cubed
  • 1/8 teaspoon cayenne pepper
  • salt and pepper to taste


  1. Saute shallots in oil until soft.
  2. Add garlic and curry, stir well.
  3. Add sweet potatoes and broth.
  4. Cook about ten minutes, until potatoes are soft.
  5. Add apples, cook an additional ten minutes.
  6. Puree in batches and return to pot.
  7. Add salt and pepper.
  8. Add more water to get desired consistency.
