John and Audrey’s Curry Kale Soup-Not Grandma’s Chicken Soup

Ingredients

  • 1 tablespoon olive oil
  • 1 1/4 cups thinly sliced leeks, white part only
  • 1 large garlic clove minced or crushed
  • 1/2 cup sliced carrots (1/4 inch thick)
  • 6 cups chicken broth (Better Than Bouillon)
  • 1 1/2 cups rotisserie chicken, shredded
  • 1-19 ounce can cannelli beans, rinsed and drained
  • 1 cup chopped kale (packed)
  • 1 cup baby spinach (packed)
  • 1 tablespoon sweet/mild curry
  • 1 cup barley

Instructions

  1. In pan, saute leeks and garlic in olive oil, about 3-4 minutes.
  2. Add carrots, cook an additional minute.
  3. Add chicken broth, chicken and curry.
  4. Bring to a boil, reduce heat and simmer 5 minutes.
  5. Add 1 cup of barley.
  6. Add beans and kale, cook an additional 5 minutes.
  7. Add spinach and cook an additional 2-3 minutes.
  8. Salt and pepper to taste.
