Decadent Chocolate Beet Cake

Ingredients

  • 2 cups of flour
  • 1 1/2 cups of sugar
  • 1/2 cup cocoa powder
  • cake recipe
  • 1 1/2 teaspoons baking soda
  • pinch of salt
  • 3 eggs
  • 3/4 cup warm water
  • 1/4 cup coconut oil (may use canola oil)
  • 1 teaspoon vanilla extract
  • 6 medium beets canned and pureed with a hand blender
  • chocolate glaze
  • 1/2 cup heavy cream
  • 3/4 teaspoon agave
  • 3 ounces chopped bittersweet chocolate

Instructions

  1. Preheat oven to 350.
  2. In a large bowl,whisk together cocoa powder, baking soda, flour, sugar and large pinch of salt.
  3. Whisk in eggs ,vanilla,oil, water and 1 and 1/2 cups beet puree.
  4. Coat a nine inch pan with cooking spray. Line bottom of pan with parchment paper and coat with spray.
  5. Pour batter into pan bake 45 minutes.
  6. Let cool 25 min remove from pan .
  7. Let stand until completely cool.
  8. To make glaze:
  9. Bring heavy cream and agave to a simmer in a small sauce pan.
  10. remove from heat and pour over chopped chocolate and stir til smooth. Let cool 5min
  11. Pour glaze over top of cake.
