Watercress Soup

Ingredients

  • 1 bag watercress
  • 1 large cauliflower, cut into florets
  • 4 cups water
  • 4 teaspoons Better Than Bouillon
  • salt and pepper

Instructions

  1. Place cauliflower and water in pot and bring to a boil.
  2. Add Better Than Bouillon
  3. Let simmer until soft.
  4. Add watercress.
  5. Continue simmering for 5 minutes.
  6. Add salt and pepper to taste.
  7. Process in blender in batches.
  8. Serve.
