Potato, Leek and Kale Frittata


  • 2 medium potatoes, sliced thin
  • 1 leek, white parts only, sliced crosswise
  • 2 cups kale, stems removed, cut into bite sized pieces
  • 3 tablespoons olive oil
  • Salt and pepper
  • 4 eggs


  1. Pre heat oven to 350.
  2. Cook potatoes and leeks in a frying pan (without a plastic handle) with olive oil until soft.
  3. Add kale and cook for an additional minute.
  4. Beat 4 eggs in a separate bowl and pour over leeks, potato and kale.
  5. Cook mixture until almost solid, leaving a little liquid on top.
  6. Place in oven and cook for about 3 minutes, until the egg is solid on top.
  7. Salt and pepper to taste.
