Cauliflower "Mashed Potatoes"

Ingredients

  • 1 large cauliflower, cut into florets
  • 4 cups water
  • 2 teaspoons Better Than Bouillon
  • 1 shallot minced
  • 2 tablespoons chives

Instructions

  1. Place cauliflower in 4 cups of water. Make sure cauliflower is covered, if not add more water.
  2. Add Better Than Bouillon
  3. Bring to a boil and cook for about 14 minutes or until soft.
  4. Drain cauliflower.
  5. Add minced shallot.
  6. Process in food processor of use a hand wand until smooth.
  7. Add salt and pepper and top with chives.
