Pear and Squash
Pear and Squash
There is a product called "Ginger People" and they make a pickled ginger. We added it to the recipe at the end, adding both juice and ginger to really make it pop.
Ingredients
- 3 pears
- 1 butternut squash
- 3 tablespoons butter
- 3 tablespoons fresh ginger minced
- 1 teaspoon vanilla extract
- 2 tablespoons agave nectar
Instructions
- Peel butternut squash,cut into quarters.
- Peel pears and remove core, halve.
- Pre-heat oven to 375.
- Place pears and squash on baking sheet, cut size up.
- Brush with butter, bake until soft. 1 hour.
- In a sauce pan, melt butter.
- Add ginger, agave and vanilla extract.
- When squash is soft (insert a knife and it slides in easily), remove from oven and place in a bowl.
- Puree with hand blender, adding butter mixture and mix until smooth.
- Salt and pepper to taste.
