Pear and Squash

There is a product called "Ginger People" and they make a pickled ginger. We added it to the recipe at the end, adding both juice and ginger to really make it pop.


  • 3 pears
  • 1 butternut squash
  • 3 tablespoons butter
  • 3 tablespoons fresh ginger minced
  • 1 teaspoon vanilla extract
  • 2 tablespoons agave nectar


  1. Peel butternut squash,cut into quarters.
  2. Peel pears and remove core, halve.
  3. Pre-heat oven to 375.
  4. Place pears and squash on baking sheet, cut size up.
  5. Brush with butter, bake until soft. 1 hour.
  6. In a sauce pan, melt butter.
  7. Add ginger, agave and vanilla extract.
  8. When squash is soft (insert a knife and it slides in easily), remove from oven and place in a bowl.
  9. Puree with hand blender, adding butter mixture and mix until smooth.
  10. Salt and pepper to taste.
