Chickpea/Garbanzo Bean Burger

Ingredients

  • 1 15 oz can chickpeas, drained and rinsed
  • 1/2 tsp lemon juice
  • 1 small shallot, minced
  • 1/2 tsp salt
  • 1/2 tsp turmeric
  • 1/2 tsp ground cumin
  • 1/2 tsp ground coriander
  • 1/8 tsp cinnamon
  • 2 tsp garlic minced
  • 1 tsp fresh ginger minced
  • 3 tbsp extra virgin olive oil
  • 2 tbsp lemon juice
  • 2 1/2 cups brown basmati rice cooked
  • 3 tbsp red bell pepper, finely diced
  • 1/4 cup flat leaf parsley

Instructions

  1. Pre heat oven 375.
  2. Line baking sheet with parchment paper.
  3. Combine chickpeas, turmeric, salt, paprika, cumin, coriander, cinnamon, garlic, shallot, ginger, olive oil, lemon juice and process in food processor until smooth.
  4. Transfer mixture to bowl and fold in red bell pepper, rice and parsley.
  5. Combine and shape into 1/4 inch thick patties, 3 inches in diameter.
  6. Place on prepared cookie sheet and bake 22 minutes or until crispy on the outside.
