Red Quinoa with Pears and Walnuts


  • 1 cup red quinoa, well rinsed
  • 3 cups water
  • 2 teaspoons Better Than Bouillon paste
  • 2 tablespoons walnut oil
  • 1 tablespoon raspberry vinegar or apple cider vinegar
  • 1/4 cup scallions chopped very fine
  • 1/4 teaspoon salt and pepper to taste
  • 3 ripe pears, diced with skin
  • 3/4 cup chopped walnuts


  1. Cook quinoa in water and Better Than Bouillon until the grain has opened, about 15 minutes.
  2. Drain and let cool.
  3. Add vinegar, oil, scallions, salt and pepper and mix in a large bowl.
  4. Add pears and walnuts to cooled quinoa.
  5. Pour dressing over quinoa and pears.
  6. Serve.
