Tilapia with Tomatoes


  • 2 pieces of tilapia
  • 2 cups cooked brown rice
  • 1 can stewed tomatoes, undrained
  • salt and pepper to taste
  • 1 tablespoon caraway seeds (optional)


  1. Pre-heat oven to 375.
  2. Place caraway seeds in a dry, hot frying pan and roast them until they pop, about 1 minute.
  3. Pour into a bowl to cool.
  4. Place 1 cup brown rice on a piece of aluminum foil, top with 1 piece of tilapia and 1/2 can stewed tomatoes.
  5. Season with salt and pepper.
  6. Sprinkle with toasted caraway seeds.
  7. Gather aluminum foil to make a closed pouch.
  8. Place pouch in a baking dish.
  9. Repeat procedure with second piece of tilapia.
  10. Bake at 375 for about 15 minutes.
