Chicken, Black Rice with Garam Masala

This recipe was created by Audrey and John using the Flavor Bible which is found on the homepage under recommended Books. Garam masala can be found in the grocery store or from Penzeys Spice online. It is a blend of Indian spices, not hot, but has a unique flavor that adds body.

Ingredients

  • 2 large chicken breasts
  • 4 baby bok choy
  • olive oil
  • 1 cup black rice, uncooked
  • 8 ounces button mushrooms, coarsely chopped
  • 1 small yellow onion, diced
  • 1/8 cup garam masala
  • 2 tablespoons mushroom Better Than Bouillion
  • salt to taste

Instructions

  1. Cook black rice in steamer or pot. 2 1/2 cups water to 1 cup rice.
  2. Cut chicken into 1 inch pieces.
  3. Saute chicken, mushrooms and onions in olive oil. About 8 minutes.
  4. Add coarsely chopped bok choy and saute 1 minute more.
  5. Add 2 tablespoons Mushroom Better Than Bouillion, dissolved in 1/4 cup hot water.
  6. Stir in 1/4 cup garam masala.
  7. Salt to taste.
  8. Stir in back rice.
