Quinoa Pasta with Chickpeas and Tomatoes
Ingredients
- 1 box quinoa pasta
- 1 tablespoon olive oil
- 3 garlic cloves minced
- 1-16 oz can italian tomatoes chopped with juice
- salt to taste
- 1/2 teaspoon fresh basil or 1 basil leaves, shredded
- 1 can well drained and rinsed chickpeas
Instructions
- Heat oil in a skillet.
- Add garlic and saute for 3 seconds.
- Add tomatoes, juice, basil and pepper.
- Bring to a boil.
- Stir in chickpeas and simmer uncovered for 10 minutes.
- Cook quinoa pasta in water until al dente.
- Drain pasta and add to tomato sauce.
- Sprinkle with parmesan cheese (optional)
