Quinoa Pasta with Chickpeas and Tomatoes


  • 1 box quinoa pasta
  • 1 tablespoon olive oil
  • 3 garlic cloves minced
  • 1-16 oz can italian tomatoes chopped with juice
  • salt to taste
  • 1/2 teaspoon fresh basil or 1 basil leaves, shredded
  • 1 can well drained and rinsed chickpeas


  1. Heat oil in a skillet.
  2. Add garlic and saute for 3 seconds.
  3. Add tomatoes, juice, basil and pepper.
  4. Bring to a boil.
  5. Stir in chickpeas and simmer uncovered for 10 minutes.
  6. Cook quinoa pasta in water until al dente.
  7. Drain pasta and add to tomato sauce.
  8. Sprinkle with parmesan cheese (optional)
