Stuffed Sweet Potato

Absolutely delicious! You need to try this recipe, adapted from Martha Stewart.


  • 1 large sweet potato
  • 4 brussel sprouts
  • 16 pecans
  • 1/2 cup dried cranberries
  • 1/2 cup crumbled blue cheese or goat cheese
  • 4 tablespoons olive oil


  1. Bake sweet potato until soft.
  2. Cut it in half and create opening in middle for stuffing.
  3. Cut brussel sprouts in half and saute with pecans.
  4. When lightly browned, remove from pan and divide between two potato halves and stuff into potato.
  5. Top with cranberries and blue cheese.
  6. Salt as needed.
