Seafood Fennel Soup

This soup contains very little fat, a great deal of omega 3 and about 6 grams of fiber. It has about 50 grams of protein.

Ingredients

  • 2 cans stewed tomatoes
  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 2 garlic cloves minced
  • 1 medium fennel bulb, sliced crosswise
  • sea salt to taste
  • white pepper to taste
  • 1 cup dry white wine optional
  • 4 cups canned fish stock
  • 12 oz cod fillets, cut into bite sized pieces
  • 8 sea scallops, cut in half
  • 12 medium shrimp, peeled,tails left on
  • 4 tablespoons tamari sauce, or to taste

Instructions

  1. Heat olive oil in medium dutch oven or large pot.
  2. Cook onion, garlic and fennel about 5 minutes.
  3. Season with salt and pepper.
  4. Add 2 cans stewed tomatoes, 4 cups of fish stock and bring to simmer.
  5. Add cod, shrimp, scallops and simmer for about 10 minutes.
  6. Add tamari, salt and pepper as needed.
