Farro and Mushrooms

Cooking Farro: 1 cup uncooked farro will yield about 2 cups cooked. Place 1 cup farro in 2-1/2 cold water, bring to a boil and cook about 15-20 minutes or until soft, but slightly chewy.


  • 4 tablespoons olive oil
  • 1 pound button mushrooms, quartered, with stems
  • Sea salt and ground pepper to taste
  • 3 garlic cloves, minced
  • 3 teaspoons, fresh thyme leaves, minced
  • 2 cups farro, cooked
  • 1 tablespoon butter


  1. Heat olive oil and butter in large skillet.
  2. Add garlic and cook for 30 seconds.
  3. Add thyme.
  4. Add mushrooms and saute for 3-4 minutes.
  5. Add to cooked farro and serve.
