Leek Soup

Better Than Bouillion paste is found in most supermarkets in the soup section. This soupd will keep in the refrigerator for 2-3 days. Leeks are a natural diuretic, high in Vitamin C and folic acid.

Ingredients

  • 2 large leeks, ends cut off, use only the white section
  • 1 large yellow onion, diced
  • 6 garlic cloves, crushed
  • 6 cups water
  • 3 tablespoons Better Than Bouillion paste

Instructions

  1. Cut leeks into rings, wash in cold water to rinse off sand.
  2. Add leeks, garlic and onions to water.
  3. Add Better Than Bouillion paste and bring to a boil.
  4. Simmer for 25 minutes.
  5. Remove half of the soup and place in blender. Blend and return to soup.
  6. Serve.
