Fritatta (Italian Omelette)
The basic ingredient in a fritatta is eggs. You can use any vegetable including potatoes, asparagus, olives and left over pasta.
Ingredients
- 4 eggs
- 1/4 cup red pepper diced
- 1/4 cup green pepper diced
- 1/2 small onion diced
- 3 tablespoons olive oil
Instructions
- Pre-heat oven to 350 f.
- In a small 8 inch fry pan with non-plastic handle, heat olive oil and cook peppers and onions, approximately 2 minutes.
- Whisk 4 eggs in a separate bowl and pour over vegetables.
- Cook until set, about 1 minute.
- Place entire frying pan into the oven and cook until egg mixture is firm, approximately 2 minutes.
