Fritatta (Italian Omelette)

The basic ingredient in a fritatta is eggs. You can use any vegetable including potatoes, asparagus, olives and left over pasta.

Ingredients

  • 4 eggs
  • 1/4 cup red pepper diced
  • 1/4 cup green pepper diced
  • 1/2 small onion diced
  • 3 tablespoons olive oil

Instructions

  1. Pre-heat oven to 350 f.
  2. In a small 8 inch fry pan with non-plastic handle, heat olive oil and cook peppers and onions, approximately 2 minutes.
  3. Whisk 4 eggs in a separate bowl and pour over vegetables.
  4. Cook until set, about 1 minute.
  5. Place entire frying pan into the oven and cook until egg mixture is firm, approximately 2 minutes.
