Fennel Summer Salad

Fennel is a low calorie vegetable that has a hint of licorice flavor. It resembles an onion bulb, but has long delicate green fronds and is often used in Italian cooking.


  • 2 fennel bulbs, green fronds removed
  • 2 large raw zucchini
  • 1/2 small red onion
  • 4 tablespoons lemon juice
  • 6 tablespoons extra virgin olive oil
  • 3/4 teaspoon ground pepper
  • 1/4 teaspoon salt
  • 3/4 cup shredded Manchego, Asiago or Peccorino cheese (optional)


  1. Shave and combine fennel, zucchini and red onion. Shaved as thin as possible.
  2. Place in a bowl.
  3. In a separate bowl, mix together lemon juice, olive oil, salt and pepper.
  4. Pour dressing over vegetables and top with cheese.
