Breakfast Amaranth

Adapted from Mark Hyman MD Ultra-Metabolism

Ingredients

  • 1 cup amaranth
  • 3 cups plain soy milk
  • 1/2 teaspoon cinnamon
  • 1 large apple, skin on, diced
  • 1/2 cup chopped walnuts

Instructions

  1. Place all ingredients, except walnuts in a saucepan.
  2. Bring to a boil.
  3. Reduce to low simmer for 25 minutes.
  4. Top with walnuts.
