African Chicken Peanut Soup

Ingredients

  • 1 1/2 cups cubed, peeled sweet potatoes
  • 1/2 cup chopped onion
  • 1/2 cup diced red pepper
  • 2 garlic cloves minced
  • 2 cups chicken breast, approximately 8 ounces
  • 1 cup bottled salsa
  • 1/2 teaspoon ground cumin
  • 2-16 oz containers organic, fat free chicken broth
  • 2 cups cooked brown rice
  • 1-15 ounce can black beans, drained and rinsed
  • 1/2 cup creamy peanut butter

Instructions

  1. Saute sweet potato, onions, pepper, garlic for 5 minutes.
  2. Stir in cooked chicken and next five ingredients.
  3. Bring to a boil, reduce heat and simmer for 10 minutes.
  4. Reduce heat, stir with a whisk.
  5. Cook two additional minutes.
