Forbidden Black Rice and Sweet Potato

Ingredients

  • 1 cup chinese black rice
  • 2 cups water
  • 3/4 teaspoon salt
  • 3 tablespoons olive oil
  • 8 scallions, whites and greens, chopped
  • 2 tablespoons fresh ginger, minced
  • 1 1/2 large sweet potatoes, peeled and cut into 1/4 inch cubes

Instructions

  1. Rinse black rice under cold water.
  2. Place rice in water and boil for 30 minutes.
  3. Cover and let stand for 10 minutes.
  4. In a separate skillet, heat olive oil.
  5. Saute ginger, scallions and sweet potato.
  6. Drain rice and toss with sweet potato mixture.
  7. Serve warm.
