Brown Rice, Bok Choy and Chicken


  • 2 cooked chicken breasts, cut into 1 inch pieces.
  • 2 cups cooked brown rice
  • 4 baby bok choy (leaves and stem), cut into 1 inch pieces
  • 6 tablespoons olive oil
  • Pinch of sea salt
  • 1 teaspoon indian curry, optional


  1. Place olive oil in large frying pan.
  2. Add bok choy and saute until bright green.
  3. Add rice, chicken and curry.
  4. Stir well and serve.
