Baked Salmon with Mango Chutney and Zuchini Fritters… For Will

Wild Caught Atlantic Salmon contains Omega-3 fatty acids. This essential fatty acid supports your heart and your blood vessels. Fish is also called the “brain food” because it’s high in protein and “good fats”  that nourish our brain cells. The chutney that tops this healthy fish includes mangos which are high in beta carotene, which is an anti oxidant. See recipe below.

Baked Salmon with Mango Chutney
12oz of Salmon Filet (preferably wild caught)
4 TBS of extra virgin olive oil
2 mangos, chopped
1 half medium red onion, chopped
1 red pepper chopped
Juice of one lime
1 cup of chopped cilantro
1/2  teaspoon of sea salt

Mango Chutney
Combine mangos, red onion, and pepper, lime juice. Let sit for half hour. Now make the salmon.
Preheat oven to 375 degrees. Brush bottom of glass casserole dish. Place salmon (scales down) in dish. Bake until pale pink (approximately 10 to 15 minutes). Top with above salsa with chutney.

Zucchini Fritters
2 Medium zucchinis in shredded in food processor
1 TBS of grated lemon zest
A handful of parsley finely chopped
2 minced garlic cloves
ground pepper
2 eggs lightly beaten
3/4 of cup of whole wheat flour
5 TBS  olive oil

Combine above ingredients.Heat olive oil in frying pan. Form three tablespoons of mixture into a patty, directly into frying pan. Make four patties at a time. Fry until brown. Flip over and fry on other side. Serve with Salmon.
